Pizza Dough
1hr pizza
Makes 1 12" pizza.
Ingredients:
- 130ml warm water
- 3.5g yeast
- 12g sugar
- 10g oil
- 3g salt
- 180g flour
Method:
- Combine water, oil, yeast & sugar.
- Rest for 5min.
- Add the rest. Stir then knead for 5 mins.
- Place in oiled container and cover for 1hr / until doubled.
- Knock back & shape. Rest for a few minutes.
- Brush top with olive oil.
- Top and bake at 250C for 7-9 mins.
7-24hr pizza

Ingredients:
- 245g warm water (86F/30C)
- 20g oil
- 7g sugar
- 4g instant yeast
- 375g plain flour
- 9g salt
Method:
- Combine ingredients thoroughly with spoon then wet hand
- Proof for 30 mins
- Do 4-5 stretch and folds + 5-6 slap and folds
- Rest for 15 mins
- Do 4-5 stretch and folds + 5-6 slap and folds
- Cover and refrigerate for 6-24 hours
- Divide dough into 2 equal pieces
- Shape each into ball, close seam
- Proof at room temp for 90mins
- Shape, top and bake at 280C for 7-9 mins.
Pizza sauce

Ingredients:
- Passata
- 1/2tsp sugar
- 1/2tsp salt
- pinch of chilli flakes
- 2 cloves of garlic
- 2tbsp butter
- Smash garlic and simmer on medium heat with butter until starting to brown.
- Add passata, sugar and salt.
- Reduce heat slightly and reduce by half, and add chilli flakes.
- Remove garlic cloves and spread on pizza.
