Pizza Dough

1hr pizza

Makes 1 12" pizza.

Ingredients:

Method:

  1. Combine water, oil, yeast & sugar.
  2. Rest for 5min.
  3. Add the rest. Stir then knead for 5 mins.
  4. Place in oiled container and cover for 1hr / until doubled.
  5. Knock back & shape. Rest for a few minutes.
  6. Brush top with olive oil.
  7. Top and bake at 250C for 7-9 mins.

7-24hr pizza

Ingredients:

Method:

  1. Combine ingredients thoroughly with spoon then wet hand
  2. Proof for 30 mins
  3. Do 4-5 stretch and folds + 5-6 slap and folds
  4. Rest for 15 mins
  5. Do 4-5 stretch and folds + 5-6 slap and folds
  6. Cover and refrigerate for 6-24 hours
  7. Divide dough into 2 equal pieces
  8. Shape each into ball, close seam
  9. Proof at room temp for 90mins
  10. Shape, top and bake at 280C for 7-9 mins.

Pizza sauce

Ingredients:

  1. Smash garlic and simmer on medium heat with butter until starting to brown.
  2. Add passata, sugar and salt.
  3. Reduce heat slightly and reduce by half, and add chilli flakes.
  4. Remove garlic cloves and spread on pizza.
